Chocolate and wine are two of lifeโ€™s simplest luxuries but when paired correctly, they become something much more. At Templeton Chocolate, we craft every batch with wine in mind. From roasting to conching, our goal is simple, create chocolate that enhances, not overpowers, your wine.

Both chocolate and wine share complex flavor profiles shaped by origin and process. Youโ€™ll often find overlapping notes like fruit, earthiness, floral tones, and deep roasted richness. When paired thoughtfully, these flavors can complement and amplify each other, creating a more dynamic tasting experience.

We donโ€™t treat pairing as an afterthought, itโ€™s built into how we make our chocolate. During conching, we refine each batch until the acidity, texture, and balance naturally complement a well-balanced wine. Our chocolate is stone ground in traditional melangers, then carefully tempered and molded by hand to ensure quality and consistency.

Roasting is where much of the flavor is developed. We use direct heat to build a deep cocoa backbone, then finish with controlled temperatures to retain fruit and floral notes without sacrificing balance or acidity. This creates a chocolate with structure and complexity, much like a well-crafted wine.

For dark chocolate, we recommend pairing with fuller-bodied reds such as Cabernet Sauvignon, Cabernet Franc, Pinot Noir, Merlot, or other bold red wines. These wines stand up to the richness of the chocolate while enhancing its subtle fruit and roasted characteristics.

Milk chocolate offers a smoother, creamier profile and pairs beautifully with lighter wines like Chardonnay and Champagne. The contrast between the chocolateโ€™s sweetness and the wineโ€™s acidity creates a bright, balanced, and enjoyable experience.
